Adulteration
Fennel is often adulterated with the fruits of other Apiaceae like F. piperitum
(Italy), fruits of grasses, cereals, weed seeds, undeveloped and exhausted
fruits of fennel, moldy fruits and dirt.

Biological Source
Black pepper consists of the dried, unripe fruits of Piper nigrum L. (Family:
Piperaceae), usually known as peppercorns. Other closely related Asian
species is Piper caninum. The word, pepper is derived from the Sanskrit
word, pippali via the Latin, piper used by Romans. The English word, pepper
is derived from Old English, pipor. Pepper means ‘spirit’ or ‘energy’ and
this was used as far back as 1840.

Geographical Source
Black pepper is native to Malabar in the Western Coast of Southern India
and Sri Lanka and extensively cultivated there and in tropical regions. The

habitat of the plant is Kerala and it is indigenous to Malabar and cultivated
in South India. It is also cultivated in Sri Lanka, Indonesia, Brazil, Singapore,
Penang (Malaysia), Siam, Johore, Borneo, Vietnam, Sumatra, Rioux-Lingga
archipelago, South America and West Indies. Two well known types come
from India’s Malabar coast, Malabar pepper and Tellicherry pepper, the
former is the higher grade pepper from the plants grown on Mount
Tellicherry, Malabar. Vietnam is the world’s largest producer (34%) and
exporter of pepper as of 2008, followed by India (19%).
Collection and Preparation
Pepper is essentially a crop of wet tropics. The plant commences bearing
fruit in the third year, comes into full production in the seventh or eighth
year and starts declining in yield in its twenty-fifth or thirtieth year.
It flowers in May-August and develops into ripe berries in another
6–8 months. The fruits that develop in the spikes are cut from the vines as
soon as the lowest drupes on the axis begin to change their colour from
green to red. The spikes are then dried in the sun or over fire followed by
the separation of the fruits from the rachis, garbled and placed in bags.
The unripe berries are cooked for sometime in hot water, to clean and
prepare them for drying. The berries are dried in the sun or by machine for
several days, during which time pepper around the seed shrinks and
darkens into a thin wrinkled black layer. Once it is dried, the spice is called
black pepper. The best grades are dried over fire and possess a smoky
odour and taste and the Singapore variety seems to be the best of all.
Characters
Macroscopic Characters
Pepper plant is a perennial woody vine of 4 m height on the support and
roots readily where the stem touches. The leaves are alternate, 5–10 cm
long and 3–6 cm broad. The flowers are small and are produced on
pendulous spikes of 4–8 cm long at the nodes. Black pepper vine is
cultivated for its fruits which are almost globular and 6 mm or less in
diameter, dark red when fully mature. The surface is dark brown or grayishblack and the apex shows the remains of the sessile stigmas and a basal
scar. The drupes are single-seeded and the seed (peppercorn) is nearly
white. Pepper has an aromatic odour and strong pungent taste. The kernel
is hollow at the centre, entirely consisting of perisperm and a small
endosperm and embryo.
Microscopic Characters
Transverse section of the drupe shows an epicarp of polygonal epidermal
cells with a distinct cuticle followed by thin walled parenchymatous
hypodermis with starch grains and chlorophyll along with scattered large

secretory sacs with oil or resin contents. The inner pericarp layer, endocarp
is brown and made-up of sclerenchyma. Seed coat layer is attached to
endocarp and is reddish-brown. Pericarp and perisperm contain oil glands.
Abundant starch grains are also present.
Chemical Constituents
The spiciness of pepper is due to a crystalline, alkaline and volatile alkaloid
piperine (5–9%), a yellow balsamic volatile oil (1–2%), a colourless liquid
alkaloid piperidine, a soluble pungent resin called chavicine, proteins and
starch (about 30%), in addition to starch, lignin, gum, fat (1%), proteids
(7%) and organic matter in the mesocarp of the fruit. Pungency and acrid
taste of the fruit is due to piperine (discovered by M. Oerstadt in 1819 and
accurately examined by Pelletier in 1821). The chief components of volatile
oil (3%) are sabinene (15–25%), limonene (50–29%), caryophyllene (10–15%),
beta-pinene (10–12%), α-pinene (8–12%), terpinene, myrcene, borneol,
carvone, carvacrol, 1,8-cineol, linalool, humulene, beta-bisabalone, and acid
amides. Other compounds like eugenol, myristicin and safrole are found
in traces. Further, branched-chain aldehydes like 3-methylbutanal and
methylpropanal are also found.

History of Black Pepper
Pepper has been known from antiquity both for its flavour and use as
medicine. No plant since the Apple of Eden has had a greater effect on
human history than the black pepper. Pepper has been used in the Western
culture for millennia with documented references dating back to 500 BC
and is known as the ‘King of Spices’ or the ‘Master Spice’. The archaeological
evidence proves that humans have been using pepper and grinding
peppercorns for 9000 years. The method of chewing betel nuts, betel leaves
(Piperaceae) and lime powder (tambula) was first described by Herodotus
(340 BC). This began when Alexander the Great (327 BC) invaded India
and discovered the pleasure of well-seasoned food. Though pepper has
been mentioned in writings that are over 3000 years old, the cultivation
began in Indonesia around 100 BC. Black pepper was found stuffed in the
nostrils of Ramesses II placed as a part of the mummification rituals shortly
after his death in 1213 BC. Pepper was also known in Greece as early as 4th
century BC. Hippocrates was known to have employed pepper in several
diseases. Pliny, the Elder, in his Natural History describes the prices in
Rome around 77 AD, as ‘Long pepper ….. is 15 denarii per pound, while that of
white pepper is 7, and of black, 4’. This indicates that pepper was used as
commodity money during the Roman time. Black pepper was well known
and widespread in Roman Empire according to Apicius’ de re coquinaria, a
3rd century cook book which includes pepper used in majority of its recipes
and in ‘The History of the Decline and Fall of the Roman Empire’ Edward Gibbon
wrote that pepper was a favourite ingredient of the most expensive Roman
cookery. It is also said that Alaric, the Visigoths (410 AD) and Attila, the
Hun (408 AD), each demanded a ransom of more than 3000 pounds of
pepper from Rome as a tribute when they besieged the city in 5th century,
which speaks of the fact that pepper was so valuable at that time and was
the collateral currency. In the Middle ages, pepper was used to conceal the
taste of partially rotten meat, as the people of the time knew that eating
the spoiled food would make them sick, and it is true that piperine in pepper
has antimicrobial properties. Black pepper was known in China in the 2nd
century BC if the reports of Tang Meng, an explorer are correct. Black
pepper made its first appearance in Chinese texts as hujiao (foreign pepper)
and by the 12th century it had become a popular ingredient in Chinese
cuisine. Pepper reached South East Asia more than 2000 years ago and
was grown in Malaysia and Indonesia about that time. Pepper plantations
in Brazil go back to 1930. Pepper has been used in India since pre-historic
times as a spice, and has been known to Indian cooking since 2000 BC.
India particularly, the Malabar coast (present Kerala state) was the
important source until well after the Middle ages to Europe, the Middle
East, North Africa, Thailand and Malaysia. In trade, it was often referred
to as ‘black gold’ and was used as a form of commodity money, as the

Romans knew both long pepper (Piper longum) and black pepper and
referred them as pepper. Chapter 5 of Samannaphala Sutta, a Buddhist book,
contains reference to pepper as one of the few medicines allowed to be
always carried by a monk. By 16th century, pepper was being grown in
Java, Sumatra, Madagascar and Malaysia. Thus, pepper was both a
seasoning and medicinal spice historically.
Medicinal Uses
The fruits of pepper are used in indigestion, asthma, fever, cough, dysentery
and haemorrhoids. It is stimulant, carminative, antiperiodic and stomachic.
It is also anthelmintic, rubifacient, resolvent and antipyretic. The oil (Oleum
piperis) is used in the treatment of pain relief, rheumastism, chills, flu, colds,
exhaustion, muscular aches and fever. It is used to increase circulation, to
increase the flow of saliva, to stimulate appetite, to encourage peristalsis,
to tone up the muscles of the colon and as a general digestive and nerve
tonic. It is used as a gargle for relaxed uvula and paralysis of the tongue. It
corrects atonic dyspepsia, flatulence and nausea. It is also used in vertigo,
arthritis and has been advised in diarrhoea and cholera. Externally, it is
used for relaxed sore throat and skin diseases. It is also bacteriostatic and
fungistatic. Pepper acts as a stimulant and accelerates the frequency of the
pulse, promotes diaphoresis, excites mucous surfaces and stimulates urinogenital apparatus.
Culinary Uses
Pepper is mainly used as a culinary condiment in almost all cuisines of the
world. Black pepper is popular for mild stews preferred in the cuisine of
the Royal Thai Court. In Cambodia, this is a part of the table condiment
called tik marij. Sweetmeats containing pepper were common in ancient
Greece and Rome, and a few of them are still found in current European
cuisine like panforte (Italian) and Lebkuchen (German). In India, pepper is
used more abundantly in the preparation of curry powder (Anglo-Indian),
garam masala (North Indian) and sambar podi (South Indian). Pepper is also
popular in Arabic cuisine such as zhoug (Yemen), baharat (Coast of Gulf),
ras el hanout (Morocco), galat dagga (Tunisia) and berbere (Ethiopia).
Other Uses
East Africans believe that the body odour after consuming substantial
amounts of pepper repels mosquitoes. Gardeners use pepper spray (in
warm water) against several kinds of pests like ants, potato bugs, silverfish,
cockroaches and moths.
Adulteration
Pepper is adulterated with hulls (broken pieces of pericarp) of white pepper.
The poorest grade is the Acheen pepper and is often mixed with pepper

shells, dirt and small stones. The pepper powder is often mixed with
groundnut nutshells, buckwheat hulls, cocoa shells, legume seeds, pepper
stems, cereal hulls, mustard husks and seeds, juniper berries, olive pits,
flax seed, ground charcoal and dust.
