TOPIC 18. ORGANIZATION OF VETERINARY-SANITARY INSPECTION IN MEAT PROCESSING PLANTS

The aim of the lesson: introduction to veterinary-sanitary inspection in meat processing plants.

The procedure of the state veterinary supervision at sites of slaughter, slaughter shops slaughterhouses and hladoboyni animals and birds.

The procedure of the state veterinary supervision on the enterprises for processing and storage of meat and other products of slaughter animals

State veterinary supervision in the meat industry includes: monitoring disinfection barriers and these shaft passers that are used to import and export products and raw materials of animal origin for compliance with veterinary rules and requirements; monitoring of vehicles and containers used for transporting products and raw materials of animal origin compliance with veterinary requirements; determination of compliance received for processing products and raw materials of animal origin veterinary accompanying documents; determination of compliance and the availability on the meat of prints established veterinary seals and stamps; veterinary inspection and veterinary-sanitary evaluation batch of meat with the issuance of the veterinary-sanitary report, and if necessary, sampling for laboratory testing; quality control cleaning and treatment products used as raw materials for further process-

The aim of the lesson: introduction to veterinary-sanitary control at the enterprises of fur and leather industry.

State veterinary-sanitary control and supervision are subject to raw hides (skins), wool, hair, feather, feathers, bone, and other types of livestock feed. Special attention is required for imported raw materials, as well as random blanks (precast).

The aim of the lesson: learning activities for conducting veterinary-sanitary supervision in the markets.

The order of carrying out veterinary-sanitary examination of products and raw materials of animal origin on the market.

Veterinary-sanitary examination of products and raw materials of animal origin on the market is carried out by the laboratories of veterinary-sanitary expertise (here in after - the Department), licensed in accordance with legislation. Veterinarians Laboratory corresponding profile perform inspection and sampling of products and raw materials of animal origin for carrying out veterinary-sanitary examination. Veterinary-san- itary examination of products and raw materials of animal origin are carried out in the Laboratory in accordance with the List of mandatory and additional research conducted by the laboratories of veterinary-sanitary expertise in the markets in accordance with Annex 1. Veterinary-sanitary examination of products and raw materials of animal origin is carried out on standard test according to Appendix 2 to this Regulation and in accordance with the Rules of inspection of slaughtered animals for slaughter and post-slaughter veterinary and sanitary examination of carcasses and organs and their veterinary and sanitary assessment, approved by the Ministry of agriculture of the Republic of Kazakhstan. Branding of meat is carried out in accordance with the Rules on the marking of meat, approved by the authorized state body in the field of veterinary. Laboratory results of veterinary-sanitary examination of products and raw materials of animal origin logs in the form according to Appendix 3. Laboratory results of veteri- nary-sanitary examination of products and raw materials of animal origin issues a certificate of examination veterinary inspector of the market on the attached form in Annex 4. In the case of non-compliance of investigational products and raw materials of animal origin veterinary regulations veterinary inspector of the market on the basis of the certificate of examination determines the mode of their use in accordance with the legislation of the Republic of Kazakhstan in the field of veterinary. plementation (3 days) since the primary veterinary-sanitary examination of products and raw materials of animal origin except the maintenance of proper storage conditions on the territory of the market; the storage of products and raw materials of animal origin in refrigerators or other receptacles located outside the territory of the market; the implementation of legal and physical persons of products and raw materials of animal origin that have undergone veterinary-sanitary expertise outside of the market, or imported products from other countries.

Prohibits implementation of products and raw materials of animal origin on the market without carrying out veteri- nary-sanitary examination, when not holding the full amount of veterinary-sanitary examination and conducting veteri- nary-sanitary examination not in the designated places.

The laboratory conducts veterinary records and veterinary records, and present them in the order established by the legislation of the Republic of Kazakhstan in the field of veterinary.

In violation of the requirements of this Regulation, the guilty persons shall bear responsibility in accordance with legislation of the Republic of Kazakhstan. Compulsory studies (surveys) animals and birds: Clinical examination (with studying veterinary certificate f-1) the general condition of the animals, visible mucous membranes and superficial lymph nodes. Thermometers, heart rate, breathing and ruminatio.

Binding studies of meat: Organoleptic inspection of the carcass, viscera and head, with the opening of all available lymph nodes and sections of internal organs. Sample cooking.
