Let me introduce myself. My name is Oleg Godunov. I am happy to say that I have found a position of Research engineer at the joint-venture producing dairy products.

As you know, Danone, a French multinational food-products corporation partnered with Unimilk, one of Russia's main milk producers. The production is based in Russia. It has four business lines: Fresh Dairy products, Waters, Early Life Nutrition and Medical Nutrition.

My work is in Early Life Nutrition. It is a high-salaried job with fulltime employment. It was this way – a telephone call and then the appointment, and finally the interview.

Oleg Godunov: My name is Oleg Godunov. I’m calling about your ad in the local paper for a position of a Research engineer at your enterprise in the production section of “Early Life Nutrition”. I’d like to come and talk with someone about the job, working hours, insurance, salary, and bonus.

Receptionist: Well, Mr Robinson is receiving applicants at 4 o’clock every Tuesday. Today is Tuesday and now it is 4 o’clock. You can have a talk with him. Do come, please…..

Oleg Godunov: Good morning, Mr Robinson, I’m here to get a detailed information about the job and the enterprise. I’ve got the resume about my previous occupation and accomplishments, and application. And covering letter and references from my previous job. Here they are.

Mr Robinson: Let me read all the information about you…

Well, after getting acquainted with all your papers, I may say that you have a chance of getting this job, so I’m going to organize an interview with your employer. He will inform you of your future duties and regularities. But I’ve got a question. What do you know about our corporation?

Oleg Godunov: I know that Danone has adopted a strategy of growth through joint-ventures, particularly in fast-growing emerging markets. In its markets, Danone has built an attractive portfolio over the past 15 years which represents over 50% of its sales.

Mr Robinson: Any more information?

Oleg Godunov: Yes. Danone is present in over 130 markets and generated sales of €22.4 billion in 2015, with more than half in emerging countries. In 2015, Fresh dairy products represent 50% of the group's total sales, Early Life Nutrition 22%, Waters 21% and Medical Nutrition 7%.

Mr Robinson: Not bad. And what do you know about corporation’s activities in Russia?

Oleg Godunov: I’ve read in the press that on June 18, 2010 Danone partnered with Unimilk, one of Russia's main milk producers. Danone and Unimilk united their fresh dairy products activities in Russia. The jointventure gave birth to the number one dairy products company. Russia became one of the five most important markets for Danone.

Mr Robinson: By the way, you are planning to work in the Early Life Nutrition section. You have all qualification required. But if we have no vacancies there, would you agree to start your career in other business lines such as Fresh Dairy products, Waters, and Medical Nutrition?

Oleg Godunov: Certainly. If I have additional special training courses, I will be able to start my activity in any business line. It will be a good full-time employment. I’ll appreciate it.

Mr Robinson: Your working hours, salary and insurance will be discussed later with your manager.

Oleg Godunov: All right. Thank you very much.

Later on, I’ve got acquainted with my supervisor, colleagues, and the manager who was in charge of the laboratory in Early Life Nutrition section. He is an experienced and qualified specialist and a talented researcher.

After a year of energetic work I have been promoted. Now I’m in charge of a group of researchers to develop a new branch in the Early Life Nutrition line.

What is biotechnology?

The term "Biotechnology" (sometimes shortened to "biotech") consists of two parts. Bio is a Greek word for "life" and technology gives an indication of human intervention. Biotechnology can be based on the pure biological sciences (genetics, microbiology, animal cell culture, molecular biology, biochemistry, embryology, cell biology). Also its interests can be outside the sphere of biology (chemical engineering, bioprocess engineering, information technology, biorobotics).

Biotechnology deals with brewing, manufacture of human insulin, interferon, and human growth hormone, medical diagnostics, cell cloning and reproductive cloning, the genetic modification of crops, bioconversion of organic waste and the use of genetically altered bacteria in the cleanup of oil spills, stem cell research and much more.

In this way, classical biotechnology refers to the traditional techniques used to breed animals and plants, as well as to the application of bacteria, yeasts and molds to make bread or cheese.

My work as a bioengineer

Two years ago, I graduated from the university with Bakalavr’s degree in Bio-engineering. As you know, bioengineers are specialists who use the principles of biology and the tools of engineering to create usable, economically viable products. Biological engineering employs knowledge and expertise from a number of pure and applied sciences. In general, biological engineers attempt to create products or modify and control biological systems so that they can replace mechanical processes. Bioengineers can apply their expertise to other applications of engineering and biotechnology, including genetic modification of plants and microorganisms, bioprocess engineering, and biocatalysis.

My work at the laboratory is connected with Food microbiology, the study of the microorganisms that inhabit, create, or contaminate food, including the study of microorganisms causing food spoilage. The field of my study is devoted to "good" bacteria, such as probiotics, which are becoming increasingly important in food science. It is to be noted that microorganisms are essential for the production of foods such as cheese, yogurt, bread, beer, wine and, other fermented foods.

Carrying out experiments, we pay much attention to Food safety which is a major focus of food microbiology. Pathogenic bacteria, viruses and toxins produced by microorganisms are all possible contaminants of food. However, there are microorganisms and their products that can be used to combat these pathogenic microbes. Probiotic bacteria can kill the pathogenic microorganisms. This is about my work at the laboratory.

But I want to change my job There are two reasons for this decision. The first is: unmatched skills. It could be that what I have studied and was trained for is not being utilized in my current role and I want to find work doing what I have been educated in. My specialization is the process of fermentation.

Food engineers know that fermentation is one of the methods to preserve food and alter its quality. Yeast, especially Saccharomyces cerevisiae, is used to leaven bread, brew beer and make wine. Certain bacteria, including lactic acid bacteria, are used to make yogurt, cheese, hot sauce. A common effect of these fermentations is that the food product is less hospitable to other microorganisms, including pathogens and spoilage- causing microorganisms, thus extending the food's shelf-life. By the way, some cheese varieties also require molds to ripen and develop their characteristic flavors.

So the second reason is: No career path. Perhaps I have been passed over for promotion or the company is too small to offer my career advancement. I see no way of progressing my career, so I look at how I might do it within another organization.
