Canned food

Canning is a way of processing food to extend its shelf life. The idea is to make food available and edible long after the processing time. Canning is a method of preserving food in which the food contents are processed and sealed in an airtight container. Canning provides a shelf life ranging from one to five years, although under specific circumstances it can be much longer. In 1974, National Food Processors Association tested the samples of canned food from the wreck of the Bertrand, a steamboat that sank in the Missouri River in 1865. Although appearance, smell and vitamin content had deteriorated, there was no trace of microbial growth and the 109-year-old food was determined to be still safe to eat.

During the first years of the Napoleonic Wars, the French government offered a hefty cash award of 12,000 francs to any inventor who could devise a cheap and effective method of preserving large amounts of food. The larger armies of the period required increased and regular supplies of quality food. In 1809, Nicolas Appert, a French confectioner and brewer, observed that food cooked inside a jar did not spoil unless the seals leaked, and developed a method of sealing food in glass jars. The

reason for lack of spoilage was unknown at the time, since it would be another 50 years before Louis Pasteur demonstrated the role of microbes in food spoilage. Following the end of the Napoleonic Wars, the canning process was employed gradually in other European countries and in the US.

Throughout the mid-19th century, canned food became a status symbol amongst middle-class households in Europe, being something of a novelty. Increasing mechanization of the canning process, coupled with a huge increase in urban populations across Europe, resulted in a rising demand for canned food. A number of inventions and improvements followed, and by the 1860s smaller machine-made steel cans were possible, and the time to cook food in sealed cans had been reduced from around six hours to thirty minutes.

As to the nutritional value, a 1997 study found that canned fruits and vegetables are as rich with dietary fiber and vitamins as the same corresponding fresh or frozen foods. In some cases, the canned products are even richer than their fresh or frozen counterparts.

An excellent Resume or Curriculum Vitae (CV) may help you get the job of your dreams and a poor one may mean a lost opportunity. Resume is the first piece of information that a company will receive about you, so it is important that your resume be well-written. It is a sort of advertisement of your personal data, educational background, and work experience, which sells you for a specific job. It is a kind of written sales presentation. An effective resume creates a favourable impression of you while presenting your abilities and experiences.

It should be presented at the beginning of any interview that you have with a company. Ideally, resume should not be longer than one page, written on top quality paper with no typing errors, with perfect spelling and grammar, and attractive layout.

The contents of a resume can be categorized as: 1) PERSONAL INFORMATION, 2) JOB OBJECTIVE, 3) EDUCATION, 4) EXPERIENCE, 5) SKILLS, 6) INTERESTS AND ACTIVITIES, 7) REFERENCES.

The resume begins with PERSONAL INFORMATION – first name, last name, date of birth, age, place of birth, marital status, address, telephone number, e-mail – centered at the top of the page.

JOB OBJECTIVE include detailed information in response to the company’s requirements. It is about the type of work you are seeking. This objective should be well thought out. Think about your career goals carefully. Notice that your desire to have a well-paid job is not included.

After the statement of intention, describe your education – list of universities, institutes, colleges you have attended in the reverse chronological order. For example, September 1988 – May 1991 Kazan National Research Technological University). If you graduated with honours, you should include this.

Your working EXPERIENCE is the next section. List work history in the reverse chronological order, starting with your most recent place of employment. Include the exact dates of employment, name of the company or enterprise, and your position. Include duties, accomplishments, and promotions as well as specific results of your activities.

Following experience, you should list your special SKILLS. This section includes your language skills, computer abilities, and any other talents. It is better to be honest about assessing your level of knowledge, “beginning

English” or “intermediate English” are very often used to describe your language abilities.

INTERESTS AND ACTIVITIES should be included in the next section. Mention student or professional organizations you belong to, hobbies and interests, licenses and certificates (for example, driving license).

In REFERENCE section list at least two people, not related to you, who can describe your qualification for the job. Their names, titles, places of work, positions, telephone numbers, e-mail should be included. If you don’t have space on your resume for this, you may write “Available upon request”.

The style and format of a resume are extremely important. A neat and well-written resume with no spelling mistakes will give an employer the impression that you are accurate and take care of details.

A resume will not get you a job. An interview with employer will get you a job. To have the opportunity of interviewing with a company you should send your resume with a cover letter.

Ultra-heat treatment and Snap freezing methods

To prevent food from spoilage two effective methods of food preservation are widely used in modern food industry: Ultra-heat treatment and Snap freezing.

Ultra-heat treatment, or ultra-pasteurization sterilizes food by heating it above 135 C (275 F) – the temperature required to kill spores in milk – for 1 to 2 seconds. Ultra-high temperature processing (UHT) is most commonly used in milk production, but the process is also used for fruit juices, cream, soy milk, yogurt, wine, soups, honey, and stews. UHT milk was first developed in the 1960s and became generally available for consumption in the 1970s. However, the heat used during the UHT process can cause Maillard browning and change the taste and smell of dairy products.

An alternative process is HTST pasteurization (high temperature/short time), in which the milk is heated to 72 C (162 F) for at least 15 seconds. UHT milk packaged in a sterile container, if not opened, has a typical unrefrigerated shelf life of six to nine months. HTST pasteurized milk has a shelf life of about two weeks from processing, or about one week from being put on sale.

Another method is Snap freezing (or cook-chill or blast freezing) Snap freezing (or cook-chill or blast freezing) is the process of rapid cooling of a substance for the purpose of preservation. It is widely used in the culinary and scientific industries.

Rapid freezing can preserve cooked meals, after cooking is almost complete. The main target group for these products are those with little time for cooking such as schools, prisons, and hospitals.

The process involves the cooking of meals at a central factory, rapidly chilling them for storage until they are needed. Snap-freeze is a term often used in scientific papers to describe a process by which a sample is very quickly lowered to temperatures below -70 °C. This is often accomplished by submerging a sample in liquid nitrogen. This prevents water from crystalizing, and so better preserves the structure of the product.
