Food safety

Food safety is a major focus of food microbiology. Pathogenic bacteria, viruses and toxins produced by microorganisms are all possible contaminants of food. However, microorganisms and their products can also be used to combat these pathogenic microbes. Probiotic bacteria, including those that produce bacteriocins, can kill and inhibit pathogens. In addition, microorganisms are essential for the production of foods such as cheese, yogurt, bread, beer, wine and, other fermented foods.

Fermentation is one of the methods to preserve food and alter its quality. Yeast is used to leaven bread, brew beer and make wine. Certain bacteria, including lactic acid bacteria, are used to make yogurt, cheese, hot sauce, pickles, and fermented sausages. A common effect of these fermentations is that the food product is less hospitable to other microorganisms, including pathogens and spoilage-causing microorganisms, thus extending the food's shelf-life. Some cheese varieties also require molds to ripen and develop their characteristic flavors.

TEXT: A STORY ABOUT SUCCESSFUL LOOKING FOR

THE JOB

Let me introduce myself. My name is Anna Smirnova and I'm a successful business development manager at A/O Vena, a St. Petersburg based brewery established in 1982. Since 1993 A/O Vena has become a part of an international concern, specializing in premium quality beer brands Peterhof, Nevskoe, Original and Imperial Porter which have created a strong image in the Russian beer market. A/O Vena was strongly expanding and developing its operations, and the company was looking for technical maintenance professional specializing in management.

My friends often ask me how it happened that I was so lucky in my being employed in such a work. I used to tell them that my first step in a successful searching for a job was to decide on the kind of job I wanted and the kind I was qualified for. This means that I answered two important questions: ”What can I do well?” and “What do I really want to do?”

I began by thinking about the work I can do and skills I was trained during my studies. As you know, I have obtained the Bakalavr’s degree after graduating from the Faculty of Food Engineering. I enjoy working in the sphere of Food industry – you can work with your hands and brain, work with other people, learn new skills in business-oriented branches of food and drink production.

So I began to talk to as many people as possible about my job interests and concerns. I talked to my friends, neighbours and relatives. I thought that these contacts might help me to get more information about vacancies, to form a “network” of people interested in helping me. I was sure that each discussion could give me additional practice in expressing myself. I got acquainted with people who work in the area of my interest but everything was in vain.

The question “Where can I find the job I wanted?” became the most important in that period of my life.

At last I made up my mind to turn to “Want ads” or job advertisements which you can find in the classified advertising section of newspapers, professional or trade journals. I hoped to learn more information about job available at the moment and to find specific information about a particular job that was of interest to me.

Finally I found “want ad” which offered a challenging and rewarding job in a dynamic company with good future prospects. It was A/O Vena. Their advert said that the candidate for the position should meet the following requirements:

-technical and engineering background with university degree,

-starting experience in marketing-related activities,

-knowledge of PC’s (Word, Excel),

-good command of English,

-high motivation.

I couldn’t understand the last requirement but decided to try my chance. I began to prepare a resume and get ready for the job interview. It was not an easy thing to do but I hoped for the best. And my efforts brought good results. I am in the team of young managers specializing in management.

A civilized and active means of looking for a job is studying the market of the offered vacancies to get an idea of necessary demands and size up your own chances. The best way of doing this is to use the help of employment agencies or independently to study the ads of job opportunities being published. Your main task is to understand whether the position being offered is consistent with the levels of your education, skills, and experience in work.

“Want ads” may just tell you about the education and skills required, work experience for this job, the location of the job, the working hours, and the pay. What is more, they tell you how to apply for that particular job.

Some adverts say that certain qualifications are required, while other qualifications are preferred or hoped for. The employer will try to hire someone who has all these qualifications.

The structure of job opportunities ads is usually the same: the name of the vacant position, the list of the candidate’s professional duties, the demands made of the candidate, and the system of compensations and benefits. Having studied the demands and duties being offered, an experienced reader may extract information on the activities of the company and the prospects of its development. Read carefully the demands to know a foreign language. Sometimes it is very important. In most cases there is a need for free command of the language – Fluent English. Free command implies an ability to deal freely with a foreign manager, to compile documents and speak on the phone. This demand may prove to be the most important.

Not all “want ads” are easy to read. The longer the want ad is, the more money it costs to be printed. To save money, employers leave unnecessary words out of the advertisement. They also use many abbreviations (the word “ad” itself) and acronyms (US, UK).

The following suggestions will help you use want ads effectively:

1.Remember that “Want ads” are only one of the methods you may use. Use all methods possible.

2.Reading all “Want ads” you will learn useful general information.

3.Don’t put much trust in ads in the yellow press.
