TEXT: WHAT DO FOOD ENGINEERS DO?
1.The grocery store. The store shelves are lined with a vast array of, canned, bagged, and boxed products that make food preparation quick and easy. And it is all thanks to Food Engineers, one group of professionals who create and test foods, and bring them to market.
As a Food Engineer, you work in a field of science that overlaps with the work of Food Scientists and Food Technologists. All of you share the goal of producing a safe and plentiful food supply for the world – both now and for the future. While Food Scientists perform research, evaluate nutritional content, and create theories about products and techniques, Food Technologists aim to adapt those theories and put them into practice. In contrast, your responsibility as a Food Engineer is to focus on packaging techniques, processing, and improving food quality.
You find ways to package goods so that they remain fresh and safe for a longer period. That might mean creating a bag for lettuce, a box for tomatoes, or a glass jar for baby food. Outside of the packaging realm, you investigate food additives and processing techniques that serve the same goal of longevity. For example, Food Engineers certainly had a hand in creating flash-frozen meats and freeze-dried bananas.
Food engineering is a vast field that include everything: from machines used in the manufacturing plant to storage systems on transport trucks. Who knows, you just might meet that goal of ending world hunger!

Food chemistry
Food is essential to the nutrition of any human being or any form of life. If an organism has no food, it can’t live and grow. Usually we call “food” the substances that we eat. Bread, meat, milk, eggs, cereals, fruit, vegetables, fish and sea-products are accepted as food. Food give us energy, build and repair tissues, and regulate body processes. Food supply a human being with nutrients.
Food chemistry states that the chief constituents of food can be classified into six groups: proteins, fats, carbohydrates, minerals, vitamins, and water. It is better to say that they are not simple substances but nutrients. Proteins, fats, carbohydrates and the mineral elements like sodium, calcium, potassium, phosphorus, and magnesium are macronutrients, because they are needed in relatively large amounts. Micronutrients are needed in smaller amounts. They are vitamins, essential fatty acids, and trace elements, such as zinc, iron, copper, iodine, selenium, chromium, and cobalt. Water can also be called a nutrient, as it is vital to life. As it is known, 70% of human body is water.
Each nutrient plays its particular role. Proteins are vital to the growth, repair, and maintenance of the human body. It also provides the body with energy. Fats provide a concentrated source of energy, surround and protect vital organs, preserve body heat, and protect the skeleton. Carbohydrates are an important source of energy. Vitamins regulate maintenance and growth of the body, control metabolic reactions in cells. Minerals are required for body building, control of body processes.

Food coloring is added to change the color of any food substance. It is mainly for sensory analysis purposes. It can be used to simulate the natural color of a product as perceived by the customer.
Flavor in food is important in how food smells and tastes to the consumer, especially in sensory analysis. Some of these products occur naturally like salt and sugar, but flavor chemists (called a "flavorist") develop many of these flavors for food products.
Food additives are substances added to food for preserving flavors, or improving taste or appearance. These are generally listed by "E number".

“Practice is the best of all instructors” – these words belong to the Latin writer Publilius Syrus. We can’t but agree with these words but now to become a qualified and experienced engineer you need deep knowledge and good training. Thus, a young person dreaming about successful career should first of all get future-oriented education in the field chosen.

The scientists point out that the developments in science and technology have led in the last few decades to the emergence of “knowledge-based” societies in which the central capital is knowledge. We remember the winged words of Francis Bacon – “Knowledge is power”. Nowadays we are the witnesses of great advances in science and technology, with tendency to innovations in all spheres of life.
The word “education” itself gains a new meaning of ”research-based knowledge” with extensive use of computers. Education becomes the central point towards the “knowledge-based” society because it is the human being who is the creator, the preserver and in some cases the destroyer of knowledge. To make analogy, just recall the Swedish chemist Alfred Nobel, engineer, inventor, businessman, and philanthropist. He is known for inventing dynamite, which can be used both for the benefit of a man and at the same time, it can bring evil as a deathly weapon capable of destroying mankind.
At present “technology-based knowledge” becomes of special significance for future-oriented education. The results of applied research are implemented and further commercialized at the pilot plants, business incubators, innovation testing grounds, and technology transfer centres. They are extremely important in Food Engineering and Food Technology.
An increasingly crucial role in societal development belongs to the universities. They are called “knowledge generators”, centers of innovation and service centers for the community, facilitating and promoting rapid changes and intensive development of the society. New educational programs based on the latest achievements in science and engineering underline the idea that a new technology should be developed into industrial technology and a system of excellent management.
The recent reports of sociologists say that it is high time to think about higher education in such spheres as medicine, computer technologies, building industry, and food production industry. One of the centers of higher education in Volga Region in Russian Federation is Kazan National Research Technological University (KNRTU). It trains highly-qualified specialists in food production and biotechnology at the Institute of Food Engineering and Biotechnology. The university has different departments specializing in Industrial Biotechnology, Food Production Technology, Meats and Diary Foods Technologies, Food from animal and plant material, Food Biotechnology, Food Production Equipment, Food Engineering at Small Enterprises.

Francis Bacon (1561-1626) – an English philosopher, statesman, scientist, jurist, orator, and the author of many books. He is considered to be the father of scientific method of acquiring natural knowledge.

Nutrition
Nutrition is the science that interprets the interaction of nutrients and other substances in food in relation to maintenance, growth, reproduction, health and disease of an organism. It includes food intake, absorption, assimilation, biosynthesis, catabolism and excretion.
The diet of an organism is what it eats, which is largely determined by the availability, the processing and palatability of foods. A healthy diet includes preparation of food and storage methods that preserve

nutrients from oxidation, heat or leaching, and that reduce risk of foodborne illness.
The list of nutrients that people are known to require is, in the words of Marion Nestle, "almost certainly incomplete". As of 2014, nutrients are thought to be of two types: macronutrients, which are needed in relatively large amounts, and micronutrients, which are needed in smaller quantities. A type of carbohydrate, dietary fiber, i.e. non-digestible material such as cellulose, is required, for both mechanical and biochemical reasons, although the exact reasons remain unclear. Other micronutrients include antioxidants and phytochemicals, which are said to influence (or protect) some body systems. Their necessity is not as well established as in the case of, for instance, vitamins.
Most foods contain a mix of some or all of the nutrient types, together with other substances, such as toxins of various sorts. Some nutrients can be stored internally (e.g. the fat-soluble vitamins), while others are required more or less continuously. Poor health can be caused by a lack of required nutrients or, in extreme cases, too much of a required nutrient.
