II. Read and translate the text.

Wheat Beer History

History of this beer starts in Bavaria - the beer capital of the world. Wheat Beer or Weissbier, as Bavarians call it is a beer made with wheat malt and brewed in accordance with ancient German tradition. In the XII century Bavarians started producing top-fermented (as opposed to bottom fermenting) beers using malted wheat and special yeast. As a result, they obtained something special. The new beer at once became a drink for the local aristocracy. According to the "Reinheitsgebot" - a law about beer purity dated 1516 - all private breweries, rural and urban, were forbidden to brew a wheat beer even if only for their own consumption. Moreover, the exclusive right to produce wheat beer was granted only to the Court and Abbeys.

In the Middle Ages German wheat beer had remained a privilege of the nobles. In comparison to usual beers of dark colors a wheat beer was very distinctive for its opaque gold color. Only in 1806 the German Authorities had lost their exclusive right to brew wheat beer and it became common property of all skilled brew-masters. A century later the Bavarian beer obtained worldwide popularity, but standards of real Weissbier have remained unchanged. According mentioned law "on beer purity" wheat beer includes only four components (ingredients) -malt, water, hops and yeast, and adding any spices, acids or other components is considered to be an essential aberration from wheat beer tradition.

Wiessbier - is a Bavarian type of top-fermented wheat beers, made with no less than 50-60% malted wheat, aroma hops, and special top-fermenting yeast.

Wheat beer production requires almost ideal microbiology. Only meeting absolute sterility is it possible to produce a true Wiessbeer. For this a wheat beer is considered, on the one hand, one of the most difficult to produce drinks and on the other - the most ecologically clean beer in the world. Brewing wheat beer requires special equipment, special ingredients, special yeast, microbiological conditions, a special recipe, and special bottles made of special glass and of a special form. The leading wheat beer producers are located in Belgium and Germany.
