When guests stay at the hotel they expect somebody to clean their rooms. The housekeeping department does it. At the head of the housekeeping service is the housekeeper. The security department employees are trained for emergencies. They are prepared со help the guests in case of fire or other dangers. They are responsible for warning the guests of the danger. They are in charge of smoke detectors and fire extinguishers throughout the hotel. The security department provides fire drills for all hotel employ- ee. Each hotel employee knows all emergency exits. In case of an injury there are first aid kits throughout the hotel. The security department is ш charge of them too.

Most hotels have got some kind of food and beverage department. It includes а kitchen, а pantry, dining-halls, bars and cocktail lounges. When а res- taurant serves individuals it usually offers а la carte menus. When а hotel restaurant serves groups it provides table d`hote menus. А hotel restaurant тау prepare light meals, such as а continental breakfast. А continental breakfast includes juice, rolls, butter, jam and tea or coffee. А hotel restaurant mау prepare а full English breakfast. It is а meal of juice, cereals, bacon and eggs, toast and marmalade, tеа or coffee. It may also prepare а full American breakfast. The rate, when the hotels offer accommodation and breakfast, has got the пате of «bed & breakfast» (В &В). А hotel restaurant тау prepare both breakfast and one full meal: lunch or dinner. The rate, when the hotels offer accommodation, breakfast and one full meal, has got the name of «half board» (НВ). А hotel restaurant тау prepare breakfast, full lunch and full din- ner.
