Outdoor kitchens

Cooking outside is hardly a new concept. The grill has long been the centerpiece of any outdoor activity, and even our ancestors recognized the utility of cooking outside when it’s hot, keeping the heat out of the home itself. Today’s trend, however, is toward glamour, comfort, and convenience. Running water, refrigeration, and full ranges are among the amenities being planned into the kitchen out back. Wood-fired ovens make for memorable pizza parties, and extended countertops create a restaurant-like experience, without “dining out”. To digest all this open-air cuisine, backyard living rooms include comfy, upholstered furnishings and fireplaces that mesmerize and banish the chill.

The outdoor kitchen is an outgrowth of the barbecue. Stainless steel grill units are finding themselves at home in permanent backyard islands of stone and brick, surrounded by smooth countertops perfect for food preparation and buffetstyle serving.

In a return to ancestral cooking, the wood-fired oven is re-emerging as an upscale outdoor kitchen must-have. Besides producing food that tastes incredible, wood-fired ovens are often lovely sculptural additions to the backyard.

A small backyard is no big challenge when designing an outdoor kitchen. The space seems enlarged with the addition of elevated lounging spaces and the avoidance of straight lines.

Whether indulging in iced teas or alcoholic beverages, the backyard bar acts as a magnet. Just like the noisy inside places where people pay to gather around a bar, the backyard bar creates a place to congregate. In this case, however, drinks are on the house, and service always comes with a smile.

The picnic table has made way for fancier furnishings in today’s upscale backyards. Upholstery fabrics engineered for the outdoors add comfort to a multicourse meal. Anyone planning on cooking outdoors will want to provide seating in which to enjoy the fruits of their labor.

What better way to cook and entertain than overlooking a grand swimming pool! Look in another direction, and one can see the countryside beyond. Unlike rooms defined by walls, outdoor rooms embrace the views.

Courtyard, Loggia and Other Home Extensions

There are some clever ways in which indoor living can be brought outdoors. The focus is on fire, be it in a built-in barbecue grill, wood-fired oven, fire pit, or towering fireplace. However, a good designer should consider all the furnishings and accouterments of fine living, as well asthe architecture of escaping outside, whether a pergola or pavilion, an extended roofline, or a sunken patio with build-in seating. Your client might never want to step inside his / her house again!

In regions of the Mediterranean, an enclosed by way of the outer walls courtyard is a part of practically every home. The goal is a private space left open to the sky. It might be a romantic courtyard, accented in rich autumn tones and illuminated by a beehive-style fireplace that sparkles in one corner or a stately courtyard defined by stone columns and with a towering chimney forming a centerpiece.

Again, borrowing from Mediterranean tradition, the loggia is a covered room, open to the outdoors and protected from the elements above by a floor of the home. Just imagine: open-air cooking takes place poolside, while a loggia helps defend loungers from excessive sunlight. In the Mediterranean regions, these rooms gain architectural appeal, their roofs are supported by columns and framed by arches. However, the idea of outdoor rooms as an extension of the home takes on many forms in today’s home designs where such rooms are outfitted for cooking and high living.

If your region gets rain, or blistering sun, a backyard room is infinitely more useful when it has a roof. Pavilions provide open-air rooms with a full roof, and usually make a pretty focal point for the backyard. Likewise, pergolas are architecturally appealing, though their slatted roofs are purely for protection against sun. In both cases, these structures provide a framework for a gathering, creating a niche within a broader landscape where people migrate and mingle.

Whether conquering an uneven terrain, or adding interest to a very flat one, sunken patios are a wonderful way to define a living space outdoors. Moreover, the walls inherent in a sunken patio make perfect built-in seating and, in some cases countertop.

An alternative to going sub-terrain with a patio is to raise up walls around it. In an urban setting, or a windy one, these walls provide a level of privacy and protection. In most cases, any view worth enjoying is still there when you stand up. Moreover, the walls themselves become part of the view, whether adorned or stunningly designed.

One of the hottest new trends in the backyard is the outdoor fireplace. Whether added as an extension of the home, or situated at a far corner of the patio, a lit fireplace acts as a party magnet. A fire pit is the focal point of the fun for a family that likes to move the action out of doors.

Whatever the season, a crackling fire is a luxurious addition to the outdoor seating area. Whether it’s a camp-style fire pit or a full fireplace and chimney, adding an outdoor heating source will keep alfresco dinners and drinks going even after the temperature dips. There’s something to be said for outdoor cooking by a great fireplace!

These days, large projects tend to be run by project managers or quantity surveyors, who are specially trained to cope with the legalities and complexities involved. However, many interior designers still coordinate smaller projects, and

Stage four

A designer may project manage or decide to hand over to a project manager. Although courses of theory-based study and formal qualifications are available for high-level project management, most designers tend to learn on the job, often at their own expense or sometimes, regrettably, at the client’s.

Running a residential project, the designer is dealing with clients on a very personal level, whereas a commercial situation involves working with professionals, whether a committee or one individual. The commercial client will understand contracts and is likely to give a much more financially focused brief based on sales, marketing objectives and company image.

The project manager has an intimidating list of responsibilities which include the interior design of the project, the organization of the supply and installation of everything related to that design, instructing the contractor / s, the introduction of appropriate specialists, overseeing the implementation, reporting to the client and looking after the finances. All team members should be involved and informed at every stage to ensure personal ownership of every detail of the project.

A job program and schedule of works need to be set within a realistic time frame and schedule to ensure that the various contractors and suppliers are brought in at the right juncture and that reasonable time is allowed for sequencing, ordering and tendering, manufacturing, installation, and curing or drying. This programme would be updated monthly and everyone involved in the project would have a copy.

Regular site meetings will be needed to discuss progress, any problems arising and any changes that might need to be made. Site supervision can be difficult when clients are living on site, since they are often more in touch with progress than the designer. In order to avoid problems in this area, it helps to establish boundaries early on in the project to determine who is in overall control.

Completion would be accompanied by final invoice and stage payments and any guarantees, instruction or information booklets would be given to the client. It is appreciated by clients if an after-sales maintenance manual is supplied containing everything to do with the work carried out. The client retains a small

part of the fee while the designer would ensure that any post-project problems arising are satisfactory dealt with.

Fees

Fee structures for interior design will vary depending on the complexity of the project but the following are the most usual methods of charging. Consultant fee For this, an hourly or daily rate would be charged and would be appropriate for the following:

a)a client who only requires a limited input from the designer

b)time spent locating artworks, antiques and other specialist items

c)the first stage of a project before the definitive brief is completed

Combination of fee and mark-up This is usually applied where projects mainly involve the supply of furnishings, fittings and equipment (FF&E). This could include a fee for the initial design concept and then any items supplied would be at a marked-up price (percentage on cost). In addition, a project coordination fee could be charged to cover installation of furniture, fittings and equipment if the job was particularly large or complex.

Fixed fee This usually applies to projects with mainly design content, with or without the supply of goods. This could include:

a)a fixed fee to cover the initial design concept

b)a fixed design fee to cover the development of the design up to a work-in- progress stage

c)a project coordination fee during work-in-progress stage

d)an administration or handling charge

Retail charging In some instances, it may be appropriate to supply everything at retail cost in which case no other fees are applicable. However, retail charging can be combined with a consultant fee.

When calculating a design fee, designers should consider the time they are likely to spend on each stage of the project as agreed with the client. In addition, they should also consider what the job is actually worth to them and what is worth on a square-footage basis. As a general rule, budget figures are placed against various elements of the job and then calculated around a set percentage of the total budget cost. This percentage will vary and is likely to be higher for a small project and adjusted downwards for a larger one. In addition to their fee, designers tend to charge expenses for travel, subsistence, out-of-pocket expenses, reproduction of drawings and documents.
