TEXT 5. “NUTRITIONAL VALUE of MEAT “
Meat is one of the main sources of protein in the human dietry. Proteins are used in the building of body tissues, although they can also be used for the production of the heat and energy. Since proteins are high-molecular weight- polymers of aminoacids, upon digestion the proteins are hydrolyzed to their constituent aminoacids.
There are no identical proteins anywhere. A lot of variations in the amounts and combinations of the aminoacids are in proteins from the different sources
Aminoacids derived from food proteins may be characterized as essential or nonessential aminoacids. Essential aminoacids are the most important components of the diet, because they can not be synthesized by the body. Nonessential aminoacids are required too, but they can be synthesized by the body with the need for them.
Food proteins differ in nutritive value because of the differences in their contents of essential aminoacids. High- quality proteins with good nutritive value are more complete and richer in essential aminoacids, than low-quality proteins. In general, most proteins of animal origin are of high quality, while cereal and vegetable proteins have a lower nutritive value.
Although meat is known primarily a protein food, it also contains other dietry substances, such as fat, some vitamins and a few minerals. Fat,because of its high energy value, is responsible for the caloric variations of meat from different animals. Some amount of fat in meat is necessary for palatability. Meat contains several of the B vitamins. Besides it is a good source of dietry phosphorus and iron, but it is low in calcium.
