illustrate the great versatility of these biological reagents and to stir the curiosity of researchers who never used these techniques to solve their analytical problems.

The intensive research carried out to achieve good stability and easy handling of the BL reagents allowed development of many simple, rapid, highly sensitive and specific assays, many of which are available as commercial kits. More recently application of the newest techniques of molecular biology greatly accelerated the continuous improvement of BL assay performance.

Moreover, national and international laws and directives, such as International Standard Organization (ISO) documents and HACCP instructions, help to increase the use of BL techniques and kits as official method of analyses.

Today, the most advanced applications are in the field of rapid microbiology and molecular biology to perform a great variety of biochemical, biomedical, environmental, and food analyses.

1. INTRODUCTION

Organized media have been extensively applied in various analytical methodologies to enhance their sensitivity and selectivity [1–6]. The success of such applications is due to the fact that organized systems can be employed to change the solubility and microenvironment of analytes and reagents and to control the reactivity, equilibrium, and pathway of chemical or photochemical processes among other effects [1, 2, 7].
