a) В состав мяса рыбы входят белковые вещества, жиры, экстрактивные и минеральные вещества, витамины и вода. Содержание и свойства химических веществ, присутствующих в мясе рыбы, обусловлены действием многих факторов как при жизни рыбы, так и после ее смерти.
b) Наиболее ценной частью являются белки рыбы, количество которых колеблется от 16 до 21%. Белки состоят из аминокислот в различных количественных и качественных сочетаниях. Часть аминокислот, входящих в состав белка, синтезируется в животном организме и относится к заменимым. Аминокислоты, не синтезируемые организмом, называются незаменимыми. Отсутствие в белке хотя бы одной из незаменимых аминокислот делает его неполноценным в пищевом отношении.
c) В белках мышц рыбы имеются все незаменимые кислоты, поэтому рыба является полноценным белковым продуктом. Белки при переваривании расщепляются до аминокислот, которые в дальнейшем служат материалом для построения специфических белковых веществ, ферментов и гормонов, свойственных человеческому организму.
d) В состав мяса рыбы входят жиры и жироподобные вещества (липиды). Химические и физические свойства жиров обуславливаются их жирокислотным составом. В жирах рыб содержатся в значительных количествах ненасыщенные жирные кислоты, которые причисляются к витамину F. Содержание высоконепредельных жирных кислот в жирах морских рыб гораздо выше, чем их содержание в жирах пресноводных рыб. Благодаря высокой ненасыщенности жиры рыб легко окисляются, что имеет большое значение при хранения и обработке сырья.
e) В состав мяса рыбы входят минеральные элементы, количество которых составляет от 1 до 4% в зависимости от вида рыб. Минеральные элементы участвуют в формировании и регенерации тканей организма, особенно костных тканей, основными структурными элементами которой являются кальций и фосфор.
