Teriyaki Trout

Teriyaki sauce is very useful, not only for fish, as here, but also for meat, such as steak or chicken.

Ingredients

4 thout fillets

For the marinade

75 ml/5 tbsp soy sauce

75 ml/5 tbsp sake or dry white wine

75 ml/5 tbsp mirin

  1. Lay the trout fillets in a shallow dish in a single layaer. Mix the ingredients for the marinade and pour the marinade over the fish. Cover and marinati in the fridge for 5-6 hours, turning occasionally.

  2. Thread two trout fillets neatly together on two metal skewers. Repeat with the remaining two fillets. You could cut the fillets in half they are too big.

  3. Grill the trout on both sides on a barbecue, over a high heat. Keep the skewered fish about 10 cm/4 in away from the flame and brush it with the marinade several times. Grill until both sides are shiny and the trout is cooked through, about 12 minutes.

  4. Side the trout off the skewers white it is hot. Serve hot or cold with any remainung marinade.
